I noticed this too! My stomach handles roasted carrots much better than raw ones now. I thought I was just getting sensitive, but maybe it is just a change in how we process fiber.

Interesting. I always thought cooking them killed all the vitamins. Is that not true for things like spinach or peppers?

Martha, some vitamins are heat-sensitive, but others actually become easier for your body to absorb once the plant cell walls are broken down by heat. It is a trade-off that is usually worth it for the comfort.

I think the key is variety. Some raw is okay in small amounts, but mostly cooked is definitely easier as we age. Thanks for sharing this, it makes me feel better about my steamed broccoli habit!
